Easy Peanut Sauce Noodles with Crispy Tofu Recipe

Let's make Peanut Sauce Noodles with Crispy Tofu

Step 1

Add the rice noodles into a large bowl. Pour over very warm water to cover and let sit for 30-45 minutes until the noodles are al dente. Drain the noodles and set aside.

Step 2

While the noodles are soaking, whisk together all of the sauce ingredients, and set aside.

Step 3

Add the tofu to a medium bowl, add in the corn starch and toss to coat. Peanut Sauce Noodles with Crispy Tofu

Step 4

Heat 2 teaspoons of the avocado oil in pan over medium-high heat. Once the oil is hot, add in the tofu in a even layer.

Step 5

Cook until golden brown on one side, about 2-5 minutes, and then flip the tofu. Repeat until it is browned on all sides. Remove from the pan and set aside. If the tofu sticks together, just break it apart with the spatula.

Step 6

In a large pan, heat the remaining tablespoon of avocado oil over medium-high heat. Add in the onions, carrots, and celery and sauté until softened and the onions are translucent.

Step 7

Lower the head and add in the soaked rice noodles, spiralized zucchini, and sauce. Cook, stirring frequently, until warmed through.
