Let's make this Veggie Burgers With Zucchini and Corn

Step 1

Preheat the oven to 400 degrees. Line a large baking tray with parchment paper and set aside.

Step 2

Add the flaxseeds and 1/4 cup water to a bowl and whisk to combine well. Set aside to allow the mixture to thicken.

Step 3

Directions, cut off the ends of the zucchini. Grate the zucchini using a box grater or the grater attachment on your food processor. Add to a bowl.

Step 4

Add 1/2 teaspoon of the salt to the grated zucchini and toss to combine. Add the zucchini to a strainer and place that on top of a bowl. Set aside.

Step 5

Add the garbanzo beans, pumpkin seeds, onion, oats, garbanzo bean flour, hummus, flaxseed and water mixture, garlic, and pepper to a food processor fitted with an S blade.
