This easy and healthy vegetable soup recipe is the kind of meal that I want to curl up with on a rainy or snowy Fall or Winter day.

Ingredients Avocado oil Yellow onion Chopped celery Salt Garlic cloves Chopped carrots Chopped parsnips Chopped potatoes Italian seasoning Pepper Cooked brown rice OR wild rice mix Chopped Tuscan kale

Let's make this Vegetable Soup

Step 1

Heat the avocado oil in a soup pot over medium-high heat. Once warm, add in the onion, celery, and salt. Sauté until the onions are translucent, about 7-10 minutes. Add in the garlic and sauté for another 30 seconds.

Step 2

Add in the carrots, parsnips, potatoes, Italian seasoning, pepper, and broth and water. Bring to a simmer and cook until the potatoes are tender.

Step 3

Add in the rice and simmer until warmed through.

Step 4

Add in the kale and simmer until wilted. Serve.
