First, buy your avocados under ripe. You want the avocados to be dark green, but firm to the touch. As the avocados bake, they will soften, and become the perfect texture. Using ripe avocados will result in mushy fries.

Second, you want to eat these fries immediately. When you do, you will be rewarded with crispy coated exteriors and creamy rich interiors. But wait to enjoy these tasty fries and you will have soggy breading and mushy fries, far from the intended result.

Ingredients:

For the sauce:

  • 1/2 cup mayo (vegan if desired)
  • Juice and zest from 1 lime
  • 1/4 cup finely chopped cilantro

For the fries:

  • 4 medium avocados, cut into wedges (avocados need to almost ripe but not mushy)

For the flour breading station:

  • 1/2 cup oat flour (can sub all purpose if not gluten free)
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper

For the liquid breading station:

  • 1/2 cup unsweetened almond milk
  • 10 dashes hot sauce
  • 1/2 teaspoon salt

For the breadcrumb breading station:

  • 2 cups breadcrumbs (gluten free if needed)
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper

Directions:

1. Preheat the oven to 450 degrees. Line a baking tray with nonstick foil and coat with cooking spray. Set aside.

2. In a bowl, whisk together all of the ingredients for the flour breading station.

3. In another bowl, whisk together all of the ingredients for the liquid breading station.

5. Take an avocado wedge, and coat it in the flour breading mixture, then quickly coat it in the liquid, and then cover it with breadcrumbs. Place the avocado fry on the baking sheet. Repeat with the remaining avocado wedges.

6. Add the fries to the oven and bake for 10 minutes. Gently flip the fries and bake for another 8-10 minutes or until golden brown. Serve with dip.
