How To Make Zoodles With Thai Red Curry Powder

How do you feel about Zoodles? Crisp crunchy noodle shapes made from zucchini? It seems like everyone is loving them right now.

It is a sneaky and delicious way to pack in some additional veggies. I am always down for that.

Let's make Zoodles With Thai Red Curry Powder

Step 1

Add the coconut oil to a large pot and heat over medium high heat. Add in the onions and a big pinch of salt and cook until translucent, about 5-7 minutes.

Step 2

Add in the bell peppers and sauté for another 3-5 minutes until softened. Add ginger, garlic, and curry powder and sauté for 30 seconds to 1 minute or until the spices become fragrant.

Step 3

Add coconut cream, coconut sugar, and 1 of cup water. Bring the mixture to a simmer, and cook for 10 minutes.

Step 4

Add in the bamboo shoots and simmer for another 5 minutes. Add more salt to taste.

Step 5

While the curry simmers, spiralize the zucchini.
