Ingredients Baking pumpkin Old-fashioned oats Sweetened coconut flakes Egg whites packed brown sugar Pumpkin pie spice Cinnamon Nutmeg Salt Pure vanilla extract Maple syrup Vegetable oil
Let's make Pumpkin Spice Granola
Begin by preheating the over to 325 degrees fahrenheit. Next, carefully slice the top off of the pumpkin with a sharp, serrated knife, working at an angle as shown above.
Scoop out the insides and place the seeds in a strainer. Rinse them thoroughly, and let them drain. Pat them dry with a paper towel. Set the pumpkin aside so you can carve it later and set it out on your front porch!
Mix the oats, coconut, pumpkin pie spice, cinnamon, salt, nutmeg and pumpkin seeds so that they are thoroughly combined.
In a separate bowl, whisk the egg whites for a minute or two until they are lighter.
Add the brown sugar, vanilla, maple syrup and vegetable oil. Whisk until everything is combined.
