One common mistake that slowly kills nearly every nonstick pan: here’s how to avoid it

Your nonstick pan came with a promise. Eggs slide off. Cleanup takes ten seconds. It’ll last for years.

Then somewhere around year one or two, that promise quietly breaks. Eggs stick to one spot. You need more oil. Food burns in patches. A few months later, you’re back at the store buying a replacement.

Most people blame the cooking. Wrong temperature, wrong utensil, wrong brand. But the cooking almost never kills the pan. What kills it happens after dinner, at the sink, in the ninety seconds it takes to “just clean this up real quick.”

What your pan actually is

A nonstick pan isn’t one solid piece of metal. It’s more like a cake with layers: an aluminum bottom, a middle layer that acts like glue, and a thin nonstick top layer. That top layer is usually PTFE (the stuff behind the Teflon brand) or a ceramic-style finish.

The whole thing works because that top layer is super smooth. Food has nothing to grab onto, so it slides right off. But smooth also means soft. Way softer than most people realize. Anything even a little rougher than the coating will scratch it. Not the big, ugly scratches you can see. The tiny, invisible ones that pile up fast.

The damage is invisible until it isn’t

A 2022 study from Newcastle University in Australia looked at scratched nonstick pans under a super-powered microscope. They found that a single 4-inch (10 cm) scratch can shed roughly 2.3 million tiny plastic bits during just one cooking session. About 9,100 of those bits end up in the food.

That’s from one visible scratch. Long before you see any, thousands of near-invisible ones are already there. Cooking oil and heat then sneak under the edges and slowly peel more of the coating away.

That’s how a two-year-old pan suddenly starts sticking, needs more oil, cooks unevenly, and eventually starts flaking. And it’s why you might swear you’re being careful with your pan and still watch it wear out fast. The damage isn’t from one dramatic thing you did. It’s from something small you’ve been doing over and over, hundreds of times, without ever seeing the harm.

Should you panic about eating the flakes?

Short answer: not really. The U.S. Food and Drug Administration and the American Cancer Society both say PTFE is chemically stable, meaning it doesn’t react inside the body. Solid flakes that get swallowed just pass right through you without being absorbed. So the “flakes in my food” fear is smaller than the internet makes it sound.

But there are still two real reasons to care.

  • First, a scratched pan is a pan on its way out. Cookware brands like Made In and cooking sites like Taste of Home say a well-cared-for nonstick pan should last three to five years, sometimes longer. Most people burn through them way faster, then spend another $30 to $60 (about €28 to €55) on a replacement, sometimes every single year. Over ten years, that’s hundreds of dollars on pans that were built to last.
  • Second, a scratched pan gets genuinely unsafe when it overheats. According to the CDC’s Agency for Toxic Substances and Disease Registry, PTFE starts falling apart at around 500°F (260°C). Above 680°F (360°C), it releases fumes that can irritate your lungs. A pan with a healthy coating handles normal cooking heat just fine. A pan with a scratched, thin coating can’t. And an empty pan you forgot on the burner hits that danger zone in a few minutes.

Put those two things together, and the picture gets uncomfortable. A pan that used to be reliable is now shedding tiny bits of coating, needs more oil to work, and could turn dangerous the moment someone in your house walks away from a preheating burner for a few minutes. All from a pan that still, at first glance, looks perfectly fine.

So what’s actually causing all those tiny scratches? It comes down to one thing most of us do without thinking, every single time food sticks to the pan. It feels like the right move. It’s not.

The mistake almost everyone makes at the sink

When food is stuck, the natural move is to grab something rough and start scrubbing. Steel wool. The rough green side of a two-sided sponge. A metal scouring pad. A stiff wire brush. They lift off the mess fast, so it feels like you’re doing the right thing.

You’re not. Every one of those tools is harder than the coating on your pan. Nonstick brands including GreenPan and Made In flat-out warn against all of them. Each scrub session lifts off the stuck food and scrapes a whisper-thin layer of coating away with it. You never see it happen. The pan looks clean. It feels clean. But the smooth surface that made it nonstick just got a little rougher.

Do that a few times a week for a year, and the coating you paid for is basically gone.

If your pan needs harder scrubbing every time you cook, that’s not a cleaning problem. That’s the coating quietly wearing away, one wash at a time.

What to do instead (and it takes no extra effort)

The fix costs nothing. It doesn’t take any longer. It’s just a swap in what you reach for.

For everyday cleanup:

  1. Let the pan cool completely before it touches water. Made In warns that going from a hot burner straight into cold water can warp the pan and stress the coating.
  2. Wash by hand with warm water, a little mild dish soap, and a soft yellow sponge, a microfiber cloth, or a soft-bristled nylon brush.
  3. Rinse and dry with a soft towel. Skip the dishwasher, even if the label says “dishwasher safe.” The hot cycle and harsh soap shorten the coating’s life even when the pan technically survives.

For stubborn, burnt-on food, don’t scrub harder. Soak.

Most nonstick brands, including GreenPan and Our Place, recommend this exact method:

  1. Add enough warm water to cover the burnt spot.
  2. Stir in about 1 tablespoon of baking soda (about 15 grams).
  3. Let it sit for 15 to 30 minutes. For heavy messes, an hour is fine.
  4. Come back and wipe with a soft sponge. The gunk slides right off.

If a spot still won’t budge, put the pan back on low heat with the water and baking soda, let it simmer for 5 to 10 minutes, then cool it and wipe. Skip the vinegar-and-baking-soda “boil” trick if you’re planning a long soak. Cookware makers say sitting in vinegar too long can dull the coating.

That’s the whole thing. No new products. Just a soft sponge, a spoon of baking soda, and 15 minutes of waiting instead of one minute of scrubbing.
