One cast-iron mistake that can ruin its natural nonstick surface: here’s the 30-second fix
If you own a cast-iron pan, you know the drill. You cook, you rinse, you clean it. For a while, everything’s fine.
Then one day, you crack an egg into it and it sticks. The pan looks a little duller than it used to. Maybe there’s a faint orange spot in a corner you didn’t notice yesterday. You start wondering if the pan’s finally done.
Here’s the thing almost nobody realizes: it isn’t done. You’ve been doing one small thing wrong at the sink, over and over, for months or years. The soap fight everyone argues about online? It’s a distraction. The real damage happens in the minute after you’re done washing.

Why the nonstick finish gives out
Cast iron doesn’t come nonstick out of the box. It becomes nonstick because thin layers of oil bake into the surface over time and turn into a hard, dark, slick finish. That finish, the dark coating on any well-used pan, is what makes cast iron slide eggs around like a Teflon skillet. It also protects the raw iron underneath from the one thing iron hates most: water.
Sean O’Keefe, a professor of food science at Virginia Tech, explains it plainly. Cast iron will start rusting the moment water sits on it, because there’s nothing on bare iron to stop it. The dark finish you built up over months? That’s the only thing keeping rust away. And when rust starts, it doesn’t just sit on top. It gets into the tiny gaps in the finish and lifts it off from underneath.
That’s why a pan can look fine one week and start sticking the next. You aren’t losing the nonstick finish from the top down. You’re losing it from the bottom up. The rust is quietly pushing the good stuff off the pan.
Lodge, which has been making cast iron since 1896, says it flat out: soaking a pan in water, leaving it wet, air-drying it in the rack, or putting it away before it’s fully dry are the fastest ways to wreck it. Lodge calls water the number one killer of cast iron. Not soap.

The soap thing everyone argues about
Almost every cast-iron conversation online turns into a fight about dish soap. Half the internet says never use it. Half says soap’s fine. Both sides think they’re saving their pan.
Here’s what the actual food scientists say. The dark finish on a well-used cast-iron pan isn’t just oil sitting on the surface. It’s oil that’s been baked hard into the metal, almost like a thin layer of plastic. Modern dish soap can’t wash that off in a normal cleaning, according to O’Keefe. The old “never use soap” rule came from decades ago, when soaps had lye in them, a strong chemical that really did eat through the finish. Dish soap today doesn’t have lye.
Lodge, Field Company, America’s Test Kitchen, and STAUB all agree on this now. A little mild dish soap is fine on a well-used cast-iron pan.
So while everyone’s fighting about soap, the actual mistake happens two minutes later, when you’re drying the pan. Nobody’s watching the moment that counts.
The mistake you’ve been making without knowing
Here’s the mistake, in plain words.
You wash your cast-iron pan. Maybe with a little soap, maybe without. You rinse it. Then you do one of these things: you leave it in the sink for later, you set it on the drying rack next to your other dishes, you shake it off and put it away, or you wipe it with a towel and call it done. That’s the mistake.
None of those actually get the pan dry. There’s always a thin film of water left, or a little moisture stuck in the tiny bumps of the iron, or a few drops in a corner you didn’t see. That water sits on the raw iron underneath the finish for hours. And that’s all it takes.

America’s Test Kitchen says once rust starts, it can eat enough of the finish overnight to leave dull or orange spots by morning. Do this every night for a year and the pan you thought was getting better every meal is quietly getting worse instead.
The really bad part? You can’t see it happening. The rust starts under the finish, so the pan looks fine on top until enough of the layer has been pushed off that food finally starts sticking. By then, you’ve lost months of buildup on your nonstick finish for nothing.
The 30-second fix
The fix is embarrassingly small for how much it saves. Here’s exactly what to do, right after you finish washing.
- Dry the pan with a towel first. Regular dish towel, paper towel, whatever you’ve got. Wipe the inside, the outside, and the handle. It won’t be truly dry yet, but get the visible water off.
- Put the pan back on the stove on medium heat for 60 to 90 seconds. This is the step that matters. The heat cooks off every last bit of water hiding in the tiny bumps of the iron. When the surface looks bone-dry all the way to the edges, turn the burner off.
- Wipe a tiny bit of oil across the inside of the pan. A drop or two of vegetable, canola, or grapeseed oil on a folded paper towel. Rub it thin all over the cooking surface, then wipe off any extra so the pan doesn’t look wet or shiny, just barely damp. That thin oil layer seals the pan until next time.
- Put the pan away only when it’s cool and dry. Not stacked with wet dishes. Not in a damp cabinet.
That’s the whole thing. Wipe, heat, oil, store. Under a minute of work.
Do this after every wash and the nonstick finish on your pan builds up instead of getting eaten away. A decent replacement skillet runs around $50 for most buyers, and plenty of people spend it because they think their pan’s finished, when really it was just losing to the drying step every night.
