Step 1
Add the beans to a large pot. Cover the beans with 6 cups of water and stir in the salt, kombu, and bay leaves. Let soak over night or 8 hours.

The next morning drain and rinse the beans. Return them to the pot along with the kombu and bay leaves. Cover with 4 cups water and bring to a simmer.

While the beans are cooking, preheat the oven to 350 degrees. Add the onion into a food processor. Process until finely chopped.

Heat the oil in a medium sauce pot. Add in the onion and cook over medium heat, stirring occasionally, until the onion is softened.

Add in the tomato paste and stir to combine. Cook, stirring constantly until the tomato paste has darkened in color, about 5 minutes.
