The one storage mistake that makes potatoes rot weeks sooner: the fix is surprisingly simple

You bought a fresh bag of potatoes last week. Firm skins, no sprouts. You put them in your pantry the way you always do. Seven days later, they’re already soft in one spot, and little white shoots are poking out of the eyes.

You didn’t crank the heat. You didn’t leave them in the sun. The reason they’re already turning is happening quietly in your pantry, and it’s almost certainly not what you’d guess.

Most people blame the temperature, the light, or the bag. Those things matter. But there’s a different mistake behind the sprouting, one that shows up in almost every American pantry, and food scientists have been trying to tell us about it for years.

The strange part: fixing it takes about thirty seconds. Nothing to buy. Just a small change in where things sit, and your potatoes last weeks longer.

What’s actually happening to your potatoes

Potatoes are alive. That sounds dramatic, but it’s the truth. According to the University of Idaho’s home storage guide, a stored potato is still breathing and still ready to start growing if the conditions around it feel even a little like spring. Warm air, humidity, and light all send the same signal: time to wake up.

When a potato wakes up, it starts sprouting, using its stored starch as fuel. Its skin can also turn green in spots. That green tint means the potato is building up a natural chemical called solanine (the potato’s own bug-repellent), which in high enough amounts causes nausea, cramping, and stomach upset. Healthline notes sprouted and green potatoes are the ones most likely to have risky levels, and the standard advice is to cut those spots away or throw the potato out.

So storing potatoes well isn’t just about keeping them pretty. It’s about keeping them safe to eat and money in your pocket.

Most home pantries are already close to right. Dark, usually cool enough, some airflow. On paper, a pantry should be a great home for potatoes. But it isn’t, for most people. And the reason has nothing to do with the pantry itself.

The mistake is what’s next to them

Your potatoes have a neighbor problem.

Not the pantry, not the shelf, not the container. Something else you almost certainly keep right next to them is quietly turning them. It looks harmless. It probably looks like it belongs there. And it’s doing three separate things to your potatoes at once, none of them obvious until the damage is done.

Problem one: the neighbor is putting a wake-up signal into the air. The University of California, Davis Postharvest Research and Extension Center, the top authority on how produce ages after harvest, says that when there’s a lot of a gas called ethylene in the air around potatoes, they start sprouting. Ethylene is a natural gas plants let off, like a ripening signal. It builds up when produce sits together with no airflow. Bruised or aging potatoes put out more of it, and other things in your pantry add their own. Once it builds up, your potatoes get the signal to wake up.

Problem two: your potatoes are quietly leaking water onto the neighbor. Potatoes are about 80 to 85 percent water. Just sitting in a bin, they slowly let off moisture through their skin. Both the University of Idaho and UC Davis have confirmed this. That moisture has to go somewhere. If the thing sitting inches away needs to stay dry, it’s slowly getting ruined too. Outer layers go soft, mold shows up, the whole thing falls apart.

Problem three: they want the exact opposite conditions. This is the part most food blogs miss. Potatoes want it damp, around 90 to 95 percent humidity, per University of Idaho storage guidance. Their neighbor wants it dry, closer to 65 to 70 percent. There’s no in-between that keeps both happy. Whatever your pantry is doing, one of them is losing.

If you’ve been storing your produce this way for years, this is where the pieces click. Every sprouted potato, every soft-spotted vegetable, every “why does my produce go so fast” moment. It’s been this the whole time.

So who’s the neighbor?

It’s your onions.

Yes, the two everyday vegetables of dinner. Bought together, cooked together, sitting side by side at the store. So they end up sharing the same basket at home. But in storage, they’re terrible neighbors. Onions give off the gases that make potatoes sprout. Potatoes give off the moisture that makes onions go soft. And what each one needs is basically opposite.

The fix takes thirty seconds

You don’t need to buy anything to fix this. No fancy vegetable keeper. And don’t stick them in the fridge, since cold turns potato starches into sugars, which the University of Idaho guide flags as a real problem for how they cook and taste.

Here’s the fix, step by step:

  1. Separate them completely. Not a foot apart, not a divider in the same bin. Actually separated, so the air around them isn’t shared. One on a top shelf, one on the bottom. One in a pantry corner, one across the kitchen.
  2. Put your potatoes in a paper bag or ventilated bin. Never plastic. Plastic traps the moisture the potato is letting off and speeds up rot. A paper bag lets it breathe and keeps light out. A wire basket lined with a kitchen towel works too.
  3. Put your onions in a mesh bag or open basket. Something breezy. Onions rot fast in anything closed. If they came in a plastic sleeve from the store, take them out.
  4. Keep both in the coolest, darkest spot you have. A basement pantry, a cool cupboard, a shelf away from the oven and dishwasher. Home pantries usually run warmer than the ideal 42 to 50°F (6 to 10°C) for potatoes, so any extra cool you can find is a win.
  5. Check them once a week. If you spot a soft potato or mushy onion, pull it out. One bad one speeds the rest along.

That’s it. Thirty seconds of rearranging, and your potatoes stop sprouting a week in, and your onions stop softening mid-month.
