  • 1/2 of a large yellow onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced

  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1/2 teaspoon oregano
  • 1 can garbanzo beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can fire roasted tomatoes
  • 4 cups vegetable broth
  • 3 bay leaves
  • A few handfuls of tortilla chips

Optional topping:

  • Sliced avocado

Directions step by step to prepare the Tortilla Soup :

  1. Heat the coconut oil in a large soup pot or Dutch oven. Add in the onion, celery, carrot, salt and pepper. Sauté until the veggies are wilted and the onions are translucent.

    2. Add in the bell pepper, and sauté for another 5 minutes. Add in the garlic and sauté until fragrant, about 30 seconds.

  1. Add in the tomato paste, chili powder, and oregano. Sauté, sitting frequently until the tomato paste has darkened in color, about 3 minutes.

  1. Add in the beans and corn. Stir to combine.

  1. Add in the tomatoes, vegetable broth, and bay leaves. Bring to a simmer and cover. Simmer, stirring occasionally, for 20 minutes.
