Autumn is officially here, and with it comes pumpkin pies, pumpkin spice lattes and salty roasted pumpkin seeds. Granola is another food that lends itself to the delicious flavor that seems to be everywhere this time of year. So today we’re sharing a delicious recipe for pumpkin spice granola that will make those cool fall mornings that much more enjoyable.

Pumpkin granola recipe ingredients

Here are the ingredients you’ll need for your pumpkin spice granola:

  • 1 small baking pumpkin
  • 3 3/4 cups old-fashionedoats
  • 3/4 cup sweetened coconut flakes
  • 2 egg whites
  • 4tablespoons packed brown sugar
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 cup maple syrup
  • 1/3 cup vegetable oil

Begin by preheating the over to 325 degrees fahrenheit. Next, carefully slice the top off of the pumpkin with a sharp, serrated knife, working at an angle as shown above.

Scoop out the insides and place the seeds in a strainer. Rinse them thoroughly, and let them drain. Pat them dry with a paper towel. Set the pumpkin aside so you can carve it later and set it out on your front porch!

Mix the oats, coconut, pumpkin pie spice, cinnamon, salt, nutmeg and pumpkin seeds so that they are thoroughly combined.

In a separate bowl, whisk the egg whites for a minute or two until they are lighter.

Add the brown sugar, vanilla, maple syrup and vegetable oil. Whisk until everything is combined.

Pour the wet ingredients into the dry ingredients and mix thoroughly.

Line a baking sheet with parchment paper, and spread the mixture out evenly. Bakein the oven for 30 minutes, and be sure to stir it every 10 minutes or else it will burn.
