Can You Freeze Pot Brownies?

Q. I have recently started making pot brownies on the weekend, but I can’t eat the whole batch in one sitting, and don’t like the way they dry out if I leave them on the counter all week. I only indulge on the weekends, so they just go bad during the week and I have to throw most of the batch out. I would like to be able to cut them into individual servings and then freeze them so I can enjoy one whenever I feel like it. I’m not sure if I can do that safely. Can you freeze pot brownies?

A. Contrary to some urban legends out there, yes you can freeze pot brownies. As with any other type of brownie, they will freeze well, and the freezing process should not affect the potency of the final product. Choosing to freeze the brownies in individual servings will increase the chance of them drying out in the freezer, so it’s important that you take proper precautions when freezing them. Freezer burn is also a concern, which can affect the quality and taste of the brownies.

How to freeze pot brownies?

Begin with brownies that are as fresh as possible, so they are as moist and soft as they can be. Allow the brownies to cool, and then cut them into individual serving sized squares. Place each square on a baking sheet and place the sheet in the freezer for about 20 minutes, or until the squares begin to harden. This will stop them from getting squished in the freezer.

Wrap each square in parchment paper, and then in a layer of plastic wrap. Brownies can get sticky when they defrost after freezing, and the parchment paper can help protect against that. Take the double wrapped squares and place them into freezer bags. Close the freezer bags, and then label and date them. Place them in the coldest part of the freezer.
