For the granola:

  • 1 cup rolled oats (gluten free if needed)
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup pepitas (also called shelled pumpkin seeds)
  • 1/4 cup shelled sunflower seeds
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons tahini
  • 1/3 cup olive oil
  • 2 tablespoons honey

For the honey mustard poppy seed dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 teaspoons poppy seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

For the salad:

  • 2 cups sliced strawberries
  • 1 avocado, cubed
  • 1 head kale, cut into bite sized pieces

Directions

  1. Preheat the oven to 350 degrees.
  2. In a bowl, stir together the oats, walnuts, pepitas, sunflower seeds, salt, and pepper.
